Spaghetti with vegan patties

I’d like to share this vegan version of our favorite dish “Spaghetti with meatballs”.

It does not have to be meat all the time. Why?

Because it takes up to 72 hours to digest meat properly. During this time your body can’t concentrate on other little things which need to be fixed. Also plant based food is more similar to our body and places the nutrients easier and more effectively in our organs. Besides that if you don’t pay attention to the quality of meat you buy, you could end up taking antibiotics and/or germs. Apart from that you might know the great suffer of animals when kept in conventional farms.

I was really surprised by the beautiful dish. The texture and color of the vegan balls are quite similar to meat. The taste is simply delicious and blends well with the tomato sauce and spaghetti. So give it a chance!

Ingredients

  • 200 g spelt spaghetti
  • 1 can (225 g) kidney beans
  • 1 onion
  • 1 clove of garlic
  • 1 tbsp flax seed
  • 3 tbsp water
  • 5 tbsp oatmeal
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • 1 tbsp oregano
  • ¼ tbsp chili
  • salt pepper
  • 1 tbsp coconut oil
  • 1 can of chopped tomatoes
  • 100 ml of water
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp tomato paste
  • 3 tbsp herbs de Provence
  • 1 tbsp oregano
  • salt pepper
  • 1 teaspoon coconut oil
  • Basil, fresh

For the meatballs you must first prepare the flaxseed egg by mixing the EL flaxseed with the 3 tablespoons of water and setting aside for 10-15 minutes. Then peel and cut the onion and garlic. Next, add a little coconut oil to a small pan and fry them. Then set aside. Now drain the water from the beans and rinse well with fresh water. Put the beans in a bowl and puree them with a hand blender. Then add the onions, garlic, flaxseed egg, tomato paste, soy sauce and the spices. Before you knead everything, mix the oatmeal in a blender. Add them to the bowl. Now knead everything with your hand to a uniform dough. Place them in the pre-heated oven (190°C) in a baking sheet for about 20min. Put the water for the pasta on the stove and cook your pasta. Next comes the tomato sauce. Peel the onion and garlic and cut into small pieces and fry in a large pan together with the coconut oil. Then deglaze with the tomato sauce and the water. Add the tomato paste and the herbs and simmer over medium heat. Enjoy!
