Quinoa Salad

You have probably heard about the health benefits of quinoa before. Nevertheless it is always good to be reminded. As we grew up the pseudograins quinoa, amaranth and buckwheat were not common. Instead we ate lots of rice, rye and wheat.

Meanwhile pseudograins have become increasingly popular in recent years as more people become aware of gluten intolerance and celiac disease.

Pseudograins do have some advantages compared to common grains. First, they contain no gluten, one of the main problems with wheat and rye. They also have more than carbs: quinoa is one of the few vegetarian foods that contains a complete protein (This means it contains all nine of the essential amino acids your body needs), is high on fiber and minerals. Amaranth and buckwheat also contain significant amounts of protein. In addition to that they are rich on B vitamins and iron.

For our digestive system quinoa has anti-inflammatory abilities and is therefore good for our gut.

This salad contains: quinoa, sesame, red lentils, tomatoes, carrots, red onion, parsley, coriander, mint, spring onion, pine nut, desiccated coconut, lime juice, olive oil, salt & pepper.
