Banana Bread
Homemade banana bread as breakfast, as snack or after workout provides you with a good amount of healthy carbs. This is the energy you need throughout the day.
For this one I used a vegan recipe and added some more ingredients.
- 275 g Flour
- 2 TL Baking powder
- 1 TL Cinnamon
- 1 pinch Salt
- 50 g Sunflower seeds or walnuts
- 40 g Coconut oil
- 80 g Dates or date sirup
- 50 ml Almond or oat milk, not sweetened
- 4 Bananas, ripe, ca. 700 g
Preheat oven to 180 ° C. Mix the flour, baking powder, cinnamon and salt in a bowl. Add the sunflower seeds or chop and add the walnuts.
Melt coconut oil in a small pot on the stove. Now stir the liquid coconut oil with the egg whisk into the flour mixture.
Place the dates (without pip) and milk into a tall and narrow vessel. Mix with the blender until smooth.
Peel the bananas, break them into pieces and crush them with a fork.
Now stir the date paste under the bananas. Then add everything to the flour mixture and stir with the egg whisk until the flour is completely worked in. Grease and flour the baking dish or lay out with baking paper. Add the dough and smooth it.
Bake in a pre-heated oven at 180 ° C for about 50 minutes. Before removing, use a wooden stick to test that no dough sticks to it.
